This weeks meal plan is a doozy. I was tired of the same old same old, so I decided to try a couple of experiments. By the end of the day, I should know which ones deserve a space in my recipes section. So far, the first meal turned out nice but needs some small adjustments.
Breakfast
BBQ Chicken and Spinach Meatloaf
- Protein – Ground Chicken
- Carb– Oat Flour
- Vegetable – Spinach
This is basically my breakfast bites turned into a meatloaf. I switched out the spices for Walden Farm’s bbq sauce and baked it.
Lunch
Chicken Stir Fry
- Protein – Chicken Breast marinated in Walden Farms Asian Sesame Dressing
- Carb – Brown Rice
- Vegetable – Green Beans and Broccoli
I underestimated the water loss when you cut the chicken up into chunks, so I will have to make another batch later this week. But a stir-fry is ridiculously easy to make, so I’m not worried.
Dinner
“Honey” Mustard Chicken and Zucchini Bread
- Protein – Chicken Breast with a “Honey” / Mustard glaze
- Carb – Oat Flour
- Vegetable – Zucchini
The chicken in this recipe is based on my Poppa’s Potato Chip Chicken that I grew up eating as a kid. It’s so amazingly delicious, I knew I had to try and FTDI it. I subbed Walden Farms Pancake Syrup for the Honey. Easy peasy. The only thing I would change if I did this again is that I cut up the chicken for easy portioning, but again, I underestimated the water loss, so the process of baking was a little weird. Next time I’ll just do full breasts. The zucchini bread was a total experiment, and I cannot wait to have a full piece. I snuck a few small pinches of it last night and it tastes pretty damn good. We made a lot of modifications to another recipe to make it FTDI, and if it tastes as good as I think it does after I have a portion tonight, I will DEFINITELY post the recipe.
I also bought Kale this week, but haven’t made any chips yet. Kale chips are so satisfying and easy to make. I haven’t added a receipe because there are a billion of them out there, and I change it up every time. Let me know if you’d at least like me to post the base, and I will!
